Our local newspaper runs really good recipes. This issue has cookies that sound so good. The readership is small, and these recipes should be shared.

Ingredients:

  • 1 cup soft butter
  • 1/2 cup sugar
  • 2 tsp. vanilla
  • 2 tsp. instant coffee powder
  • 1/4 cup cocoa
  • 1 3/4 cups flour
  • 1/2 tsp. salt
  • 2 cups pecans or walnuts, finely chopped

Directions:

Preheat oven to 325 degrees F. Cream butter, sugar, and vanilla until light and fluffy. Add coffee, cocoa, flour, and salt. Mix well. Add the nuts and shape into 1 inch balls. Place on ungreased baking sheets. Bake at 325 degrees F for about 17-20 minutes. Roll in powdered sugar or a mixture of cocoa and powdered sugar while still warm. So good!
