Christmas Eve Low Carb Crust Pizza

With all the rich food during Christmas, this is a nice change of pace. It's also an easy and quick Christmas Eve meal when you're rushed during the holidays. You can decorate it with tiny stars cut from red and green bell peppers to make it more festive. :-)

Total Time: 1 Hour

Yield: 4

Supplies:

  • Crust
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded parmesan cheese
  • 1 egg
  • 1/2 tsp tsp Italian seasoning
  • Toppings
  • 1/2 cup tomato sauce
  • 3/4 cup shredded mozzarella
  • Other toppings of your choice: sausage, olives, mushrooms, peppers, etc.

Steps:

  1. Preheat oven to 400 degrees F. Spray your 12 inch pizza pan with oil.

  3. Mix the cheese, egg, and seasoning together, then carefully spread it out on the pizza pan using a spatula.
  4. Bake for about 20 minutes until the crust is a nice medium brown. When you touch the crust, it should be somewhat firm.
  5. Let the crust cool for a few minutes. Spread the tomato sauce across the crust, leaving about 1/2 inch around the edges untouched.
  6. Spread cheese on top of tomato sauce and then add your choice of toppings at this time.
  7. Place the pizza back into the oven and bake for about 10 minutes or until
  8. cheese is bubbly. (If you are making a plain cheese pizza, turn to low
  9. broil for about 30 seconds, which will brown the cheese bubbles.)

Note: Use a sugar free tomato sauce if you are trying to
keep it low carb.
