Holiday Bread Pudding

Ingredients:

  • 4 cups bread cubes
  • 1 qt. hot milk
  • 3 Tbsp. butter
  • 4 eggs
  • dash salt
  • 1 cup sugar
  • 1/2 tsp. vanilla
  • 1 tsp. cinnamon

Directions:

After milk has been boiled, combine it with bread cubes and butter. Then allow it to stand for 10 minutes. Beat eggs with salt until light. Add sugar, cinnamon, and vanilla and beat until lemon-colored. Add bread mixture. Pour into greased 2 qt. baking dish and bake at 350 degrees F for 50 minutes. Serves 6-8 people.

The ingredients say hot milk but the directions say to boil it. I was under the impression that because milk is now pasteurized, you should never boil it but that it can be scalded (taken off the heat as soon as it begins bubbling, but before it comes to a full boil).
