Red and Green Peppers Appetizer

To offset all the calories out there this season, serve green and red peppers. I clean and cut peppers in thin strips to fit into little plastic cups from the party store. They are 2 1/4 inches high. Since they are 2 ounce clear cups, the colors of the peppers show through.

If you cut peppers in half from top to bottom, some pieces may have a shape of a candy cane. Cut into pieces about 2 1/2 to 3 inches high. Add a snow pea to each cluster of 6 or 7.

Serve on a tray or you can fit about 24 into a 9 by 13 inch cupcake holder with lid for travel. I place a squeeze bottle of low-fat ranch dressing nearby, so takers can squeeze the amount they want at snack time. A big hit also at football tailgates or picnics.
