Making Brownies in a Jar Mixes

A favorite Christmas gift is the mix in a jar. You have seen them, anything from cookies to soup, and of course brownies. They are fun to make and equally fun to receive. The recipient can then bake up some delicious, chocolaty brownies whenever the mood hits them. This is a page about making brownies in a jar mixes.

Ingredients:

  • 2 1/4 cups sugar (level and firmly packed)
  • 1/2 cup cocoa powder (clean inside of jar with a paper towel after this layer)
  • 1 1/4 cups firmly packed flaked coconut
  • 1 tsp. almond extract
  • 3/4 cup coarsely chopped whole almonds
  • 1 1/4 cups flour
  • 1 tsp. baking powder
  • 1 tsp. salt

Directions:

In layers, add sugar and cocoa powder. Clean inside of jar with a paper towel after this layer. Then add flaked coconut, sprinkled with almond extract, toss to blend, then add almonds. Add flour mixed with baking powder and salt. Add mixed flour a little at a time, pressing in tightly after each addition.

Almond Joy Brownies (recipe on card attached to lid)

  • brownie mix
  • 3/4 cup (1 1/2 sticks) butter or margarine (not diet), melted
  • 4 eggs, slightly beaten

Empty jar of brownie mix into large mixing bowl. Throroughly blend.

Add butter and eggs, slightly beaten. Mix until completely blended.

Spread batter in a cooking sprayed 9 x 13 inch baking pan.

Bake at 350 degrees F for 30 minutes. Cool completely in pan. Cut into 2 inch squares. Makes 2 dozen brownies

Servings: 2 dozen brownies

Cooking Time: 30 Minutes

Ingredients:

  • 1/2 cup firmly packed flaked coconut
  • 3/4 cup chopped pecans
  • 2 cups firmly packed brown sugar
  • 2 cups flour mixed with 1 1/2 Tbsp. baking powder and 1/4 tsp. salt

Directions:

Start filling the jar with the ingredients in order starting with the coconut. Lastly, add mixed flour a little at a time, pressing in tightly after each addition. Use jar lid to push the last of the flour down into the jar.

Brownies (recipe on a card attached to jar)

  • jar of brownie mix
  • 1 1/2 sticks butter or margarine (not diet), very soft
  • 2 eggs, slightly beaten
  • 2 tsp. vanilla (optional)

Mix until completely blended. Spread batter into a cooking sprayed 9 x 13 inch metal pan. Bake at 375 degrees F for 25 minutes. Cool 15 minutes in baking pan.

Trim 1/2 inch from each edge of brownies (discard this overcooked portion). Cut brownies into 1 1/2 inch squares. Cool completely in pan.

Makes 2 dozen brownies.

Prep Time: 10 Minutes
Cooking Time: 25 Minutes

Mix flour with baking powder and salt. Start filling jar with sugar at the bottom. Add cocoa powder, cleaning the inside of jar with a paper towel after this layer.

I hope someone can help me out. I wish to give a cake/brownie mix in a jar as a gift to a very busy new mother who loves to bake homemade cakes and brownies from scratch, but has no time to weigh and measure.

Due to allergies, boxed cake mixes are not an option, there are too many additives. Plus the family has egg allergies too! Is such a thing possible? All the recipes I have found require eggs to be added.

Wacky Cake
I've made this for over 40 years. It's the only cake that my children wanted for their birthday! Also doubles well and makes great cupcakes.

1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons cocoa
1/3 cup cooking oil
1 tablespoon vinegar
1 teaspoon vanilla
1 cup cold water

Mix dry ingredients in 9 x 9-inch pan. Make 3 holes; pour oil, vinegar and vanilla in separate holes. Pour water over all. Mix well with fork or hand mixer. Do not beat. Bake at 350 degrees F for 30 minutes. Leave in pan and frost (with chocolate fudge icing) while still warm.

Ground flax seed is a good egg replacement. I mix 1 heaping tablespoon of ground flax seen in 1/4 cup of warm water. Let it set a minute, then mix in.

This will replace one egg in cakes, breads, and cookies. I have not tried putting the ground flax seed directly in my jars of mix.

Chocolate Depression Cake
Ingredients:
· 3 cups flour
· 2 cups sugar
· pinch salt
· 2 tsp. baking soda
· 10 level Tbsp. unsweetened cocoa
· 2 tsp. vanilla
· 3/4 cup salad oil
· 2 Tbsp. vinegar
· 2 cups cold water
Directions:
Sift dry ingredients into a large mixing bowl. Add remaining ingredients and mix with a large spoon until smooth. Spoon into a greased and floured 13x9x2 inch baking pan. Bake at 350 degrees F for 30 minutes. Frost with your favorite frosting.
